It is officially summer! Along with the end of the school year, two things really mark the start of the summer season for me. The first is gathering with family—it never feels like it's truly summer until the cousins are together. The second is the proliferation of roadside stands selling juicy, drippy, mouthwatering Texas peaches. There's nothing like that first bite of an ice-cold Fredericksburg peach, juice running down your arms and chin.
This easy and delicious summer snack is a celebration of both summer signals. It's cool and refreshing, comes together in a flash, and doesn't require any actual cooking, just chopping and mixing.
Find your closest roadside peach stand, gather your people together, and dig in!
Ingredients:
- 6-12 oz Goat Cheese (you can use a log or crumbles, any plain, unflavored goat chese will do)
- 2-3 Tbs Fredericksburg Peach Jam (measure with your heart and taste as you go)
- 1-2 Tbs Heavy Cream or Half & Half (add a little at a time, just enough to make it a little creamy)
- 1-2 tsp Fresh Rosemary, chopped, plus sprigs more for garnish
Method:
- In a small mixing bowl, whisk together goat cheese plus a small amount of the remaining ingredients until creamy and fluffy. (You could do this in the food processer instead, but I prefer mixing by hand for greater control over the texture.)
- Taste and adjust. If you'd like a firmer texture add more goat cheese; creamier add more cream. For fluffier texture, whip longer. For sweeter flavor, add more jam; punchier, more rosemary.
- Garnish with slices of fresh or grilled peaches and sprigs of rosemary. Serve with crostini or crackers.
