Mom Cherry's Oatmeal Cake Recipe

Many years ago I made my first trip to Kerens, Texas to meet my boyfriend's family. We had met at Baylor and I had quickly fallen in love with this handsome and sweet country boy. When we arrived, his mother had this cake sitting—still warm—on the counter. The smell filled their home and she offered me a big piece, not even knowing that I loved sweets. I fell in love with it and every time I returned for a visit, she had it waiting for me. Mom Cherry became my mother in law (thank goodness!) and she continued to surprise me with this delicious cake. Every time I bake it, I am taken back to those sweet, sweet days. I sincerely hope it will become a family favorite and spark some sweet memories for your family also.  

Mom Cherry's Oatmeal Cake

1 1/4 Cups Boiling Water 
Pour over:
    1 Cup Oats
    1 stick Butter
Mix and let stand 30 minutes
 
Add:
1 Cup Brown Sugar
1 Cup White Sugar
2 eggs
 
Mix dry ingredients and add to the above mixture
1 1/3 Cups Flour
1 tsp. Baking Soda
1 tsp. Cinnamon
1 tsp. Vanilla
 
Mix.
Bake 30 minutes at 350 degrees in 9 x 11 pan.
 
Just before the cake is finished baking, bring the following ingredients to a slow boil in a small stew pan:
1 Stick Butter
1/2 Cup Canned Milk
3/4 Cup Sugar
1 Cup Coconut
1 Cup Chopped Pecans

1 tsp. Vanilla

Remove Cake from the oven. Change oven setting to broil and slowly pour the hot mixture over the Oatmeal Cake. Place under broiler until topping is lightly brown. Remove from oven and Enjoy!
